Cải ngọt nhặt sạch, cắt khúc ngắn rồi rửa sạch, để ráo nước. Hành lá bỏ rể, rửa sạch, băm nhỏ đầu hành, phần lá cắt khúc ngắn. Ngò rí cắt nhỏ.
Mì chần sơ vào nước sôi rồi vớt ra rổ để ráo. Lúc này dùng 2 chiếc đũa, tách sơ các sợi mì ra với nhau để lúc xòa ko bị dính mảng lớn.
Phi thơm tỏi băm và đầu hành lá với 30ml dầu ăn rồi cho cải vào xào.
Khi cải mềm thì cho mì vào, trộn nhanh tay. Nên 1/2 muỗng cà phê muối, 2 muỗng cà phê hạt nêm và 1 muỗng cà phê bột ngọt, tiếp tục trộn đều cho mì thấm gia vị và hơi săn lại thì tắt bếp.
